this sunday, since ananya { my super smart producer bestie} was staying over, we decided to make use of the beautiful location i am so grateful to be living in {worli, duh} and go for a jog (me) / walk (her) on worli sea face.
we jogged/ walked for an hour and then got hungry so stopped at subway on the way home to grab a bite. i couldn’t resist the double chocolate chip cookie and ordered the cookie with my sub too. not the best idea considering the whole point of the jog was to stay fit but honestly sometimes i have NO willpower whatsoever. {make that most of the time}
later jinal and saloni came home and we made {or atleast tried to make} the chipotle burrito bowl and it was SO good. we finished everything and it made me realise how little my ‘stay fit resolution’ even means to me.
here’s the recipe in the event you want to try it at home too.
Sour Cream
mix half a cup of hung curd and half a cup of fresh cream in a bowl. add a pinch or salt, one to two cloves of finely chopped garlic, and a dash of white vinegar. mix ingredients well and the sour cream is done.
Guacamole
You will need one ripe avocado {only select stores in mumbai sell these. try natures basket or food hall at palladium} smash it till its like a paste and add lemon juice, chopped onions, chopped tomatoes, chopped coriander, a tablespoon of fresh cream and salt to taste.
Corn
boil some american corn. once ready add lemon juice, chopped coriander and salt to taste.
Salad
Sautee some capsicum and onion in olive oil and add a pinch of salt.
Beans
Once you have boiled and cooked the kidney beans (rajma) and some salt and any hot sauce of your choice {we used cholula and shriracha, check picture} and some taco seasoning {if you have some, we got ours from palladium}
Lemon Coriander Rice
Try using less water to cook the rice so that it isn’t too lumpy. Once cooked put it in a dish to separate and add lemon, chopped coriander and salt to taste.
Cheese
grated cheese of your choice. we used the mexcian blended pre- grated cheese. which we bought from food hall.
Pico De Gallo Salsa
can be made at home or purchased at any store near you. here’s the recipe i use. pinterest is my true love.
Take a big bowl and add the above ingredients in the proportion you prefer and add lots of hot sauce {we used shriracha} and voila your burrito bowl is ready.
^^ how good does that look?^^
Also met my grandad. and i love how he’s so happy to see me always. and more how happy i get once i see him.
i love him. way much. and feel bad that i do not spend as much time with him as i want.
^^ as you can see he refuses to smile for pictures.^^
wow you made it through this post? you deserve a burrito bowl. the real deal. lets fly to new york?
