two very different ways to use your left over potatoes

i saw these extremely simple baked potato recipes on pinterest. if you love potatoes as much as i do, you’ll make both tonight!

boil potatoes in salt water until tender.

take a cookie pan and drizzle it with olive oil.

place boiled potatoes on the pan and smash with a potato smasher until cookie like.

brush each potato with olive oil and sprinkle salt, freshly ground black pepper and herbs. (any herbs will do, i use thyme)

bake : for around 20 – 25 minutes (225 degrees C) until they are crispy and golden!

preheat the oven to 220 degrees C. Put the potatoes flat side down on a chopping board and cut into slices almost all the way through at around 3 to 4 mm intervals.

sprinkle garlic between the slices. some butter, salt and freshly ground black pepper.

drizzle some olive oil on top of each potato.

bake : for about 40 minutes until they are crispy and the flesh is soft.
